Denny, nailed it Steve, if I know I will spray my next coat in 30 minutes I shoot my test panel 10 before and see, a lot of times it seems like the more weight of multiple coats makes the paint sag I think. By the way Iwata guns are tops I have heard as well, never used one yet though.
Until I started spraying my own stuff I always felt like I was only building part of the car, the questions are always, who built it? & who painted it following and its always fun to say you did yourself, the biggest compliment I have had is I guess, do you own a body shop? Its also nice to have a friend like mine who is an expert and I can ask as I know I am getting a correct answer thats proven, there is a bunch of ways to skin a cat (no pun intended for Ryans coyote hunting) but I know his way will last at least, and he has helped me a bunch.
