If I go with the 4.60 x 4.375 stroke, that will be close to a 1000hp right there with good heads/cam and high compression. No power adders, rpm will be what you say it will safely hold. To be honest, I think the 632 street version you sell, but with 12to1 compression to run e85 might be a possible way. I don't mean to offend or insult your intelligence.
