    A few choices.
    The ones in the door are typical upholstery backer board, but could be done with ABS sheet, or luan plywood (like door skins). Behind the flap you could put the elastic pocket thing you envision if it's somewhat shallow, or you could make a compartment from the panel board material, or mold one from fibergalss. Carve a male mold from foam for that.

    Also some pics of larger storage in the trunk side areas, again, formed from panel board.
