I don't know what kindof fuel you have available to you, but if the motor is truly 10.5:1 static compression ratio, then that cam is way too small. I doubt you will be able to operate the motor on pump gas without detonation. If I were you, the carburetor would be the least of my worries right now.
10.5 needs a cam with around 235-240 degrees duration @ 0.050" tappet lift.
You have to match the intake closing point on the intake lobe of the camshaft to the static compression ratio in order to arrive at a dynamic compression ratio which will make cylinder pressure that is compatible with the available fuel.
Now, if you have E85 available, rock on dude, you're good to go.
Oops, got carried away and forgot the original question. You'll make more hp and torque with a 750 if you have enough gear to get the motor to the rpm point where it can use a 750. If you have a tall, stock-type rear gear, then just hang onto the smaller carb until you bolt in some gear.
