P.S. BTW, Y'all, I mentioned hot water cornbread (aka corn dodgers via Rooster Cogburn) and they are simple to do. Just combine equal parts of boiling water and Aunt Jemima's "self-rising" cornmeal, shape into flattened biscuit sized patties and fry in Canola or whatever oil you desire. I always add a little Cajun Seasoning to the dry mix before adding the water but any favorite seasoning would be fine. These are very similar to hush-puppies except they are flatter and better IMHO - - - - we like them instead of regular cornbread.
