If the engine and associated parts are all original to the car just keep them in the corner of the garage. I'm doing the same thing with my car. The engine is getting swapped out for something a little better. But keeping the original engine and parts if the next owner (should there be one) want to put it back to stock. It's only original once and hard to find the correct date code parts when they are gone. That's if you decide to swap the 351 for the 460.

Objects in my rear view mirror are a good thing unless,.... they have red and blue lights flashing.

I'd build a big cube small block (only because I never have) and leave it pretty stock looking.
I don't know where torque over takes the structural integrity but it is a unibody car so if you build a big engine you might want to consider that.
And if you want it to be a 4 speed car I have the correct big shaft toploader for a 69 Torino 428 laying under my bench collecting dust.

It all depends on what you want to spend and how much work you want to do.
If you go with the big block your gonna have to switch tranys.
Probably the cross member and drive line too.
Not to mention moving motor mounts.
