If you take it to 6500 than Id say you could use a little more than what you have, personally Id use a 670 Holley Street Avenger. You could also install a 1" open spacer under the carb to increase plenum volume , has simialer effect to installing a slightly larger carb(doesnt always work that way though ). personally I think 750 is a bit much.
