As Denny W. noted the 750 will give you more top end power.However I think you will also see a decrease in throttle responce with the bigger carb.Also with the 750 you you will be dealing with mechanical secondaries witch also has an effect on street drivabilities.I would give it a shot anyways,You might like it.
