I'm using zinc plated steel on my 50 wagon. SS is $$$ and you must use antiseize on all the threads.
Aluminum can also be used but over-tightening can happen too easy.
Tip........when using AN make sure you have the proper 37deg flare when you make up the lines.

Not sure but seems that aluminum fittings are not D.O.T. approved. Also check your brake flex lines as they need to be D.O.T., some braided steel lines are not.
