If I still had a relatively low cost source (where I used to work ) I would use nothing but Swagelok fittings on just about any tubing. All the lines on my '30 A-bone were Swagelock 316 stainless. No flares necessary! They're widely used in the chemical processing and natural gas industries.

As for DOT, I've registered hot rods in Virginia, Nebraska and Kansas. No one ever questioned a braided steel brake hose, AN or Swagelok fitting. DOT standards writers often have cranial rectitus.

I used all SS brake lines and SS fittings on my '34. Would definitely not use aluminum fittings with SS lines. Be prepared though, the SS fittings are definitely high dollar.
