    all of your rear pinion's are offset.

    Yes they are, but they're not lolly-gagged in relation to the centerline of the car. If you install the motor/trans perpendicular to the centerline of the rear axles (parallel with the pinion), then you will have two cancelling angles in the driveline as viewed from above and all will be right with the world.
