I would bet in most cases somebody comes out on the short end of the stick in barter deals. I have seen lots of cases where someone says "if you do this for me I'll do that for you" and before it is over one end of the bargain gets forgotten about.

From personal experience I can tell you that it usually spells the end of a friendship or partnership. Can't tell you how many times I have done something or given some item with a promise that something else would be done in return, and then the guy disappears. Now all deals are cash.

The old days when a handshake was gospel are gone unfortunately.
