There're lots of stupid people out there frying turkeys is the problem. If a person uses a little common sense (and follows directions) you establish your oil level using water and the biggest turkey you're cooking first, dump the water and dry everything, including the turkey, then when the oil is hot you turn off the flame, gently immerse the gobbler into the hot oil, and when everything is stable light the fire again to bring the temp back up. The ones who drop an oversize turkey into a pot overfilled with hot oil over a lighted fire??? Maybe they are trying for the Darwin Award???
