The Edelbrock carburetors are great units but they tend to run rich out of the box. I’m more of a Chevy guy and have used the Performer and Thunder series Edelbrock on 305 to 454 cubic inch engines and with very few exceptions I’ve had to lean them down on stock and near stock engine configurations.
Is this a new carb? If so, you should have received a fairly comprehensive manual with it that you really need to read and digest. If not, down load here: http://www.edelbrock.com/automotive_...406_manual.pdf (make sure you get he one for your carburetor.)
Study the “Calibration Reference Chart” and determine what conditions you have. Your comment on “drinking gas like it’s at the bar” and my insides tell me that you’re rich and you will need to install leaner jets and metering rods. A size (or two) makes an incredible difference at WOT. Note that you will need a new gasket (number 28) when you change the jets.
The counter weight mentioned above is called “Air Valve & Weights” (number 42). I would not recommend grinding this as it is a precision component and designed to bring secondaries on only when there is sufficient vacuum.
Hope this helps.

I've been checking in and figured the site had died forever. I checked today and bam it's back on. Awesome. I don't contribute much here, I just come to read and enjoy hotrod builds and good company...
