When you say dumped too much fuel, was there too much fuel at idle or while you stepped on the gas under load? If it's dumping too much fuel at idle you may just need to adjust the idle needles. On the other hand make sure the power valve isn't blown.
I wouldn't go with 48's in the holley, that's too small, you might want to start with 65's and go from there.
