Gypsy, it would help if you could narrow down your area in the southeast, the southeast covers a very large area! There are lots of good shops in the south, Alan Johnson in Ala, Bobby Alloway in TN, Jason Graham in TN, to name three of the best in the business, plus hundreds of lesser known shops that do great work. Be more specific as to your needs/wants and someone can help you. Where are you located in the southeast?
