I had a '36 and they're sweet. They have the right proportion of the swept fenders and laid-back grille - hard to improve on thta and smart builders will accentuate thta aspect. I am more of a traditionalist so take my advice and weigh it against a street rodders', as been said - none of us will give you 'bad' advice.
I am thinking you have a very nice piece to begin with, if you want to chop up a cab and run around fenderless please don't whack up what you have and part it out. It belonged to your dad, finish what he started and repect what he has left you. Do Not - under any circumstance stick a mustang 2 front end under it! You have the fixins for a noble hot rod, you stick a mustang 2 front end under it and all you'll have is just another street rod - no matter what you do. (i know, i just said a blasphemy).
Spend the time to learn the difference between a tradional hot rod and a street rod befor you make a decision.
