Any ideas on a better way to wire it up? I found this but think its kind of a lot of trouble when a regular switch will do the same. Its a magnetic trigger switch.

The question to me is what is your intent? Are you truly looking for an old school "kill switch", like on a motorcycle, or are you intending it to be a form of security, i.e. hide the switch so that the vehicle won't start without the switch being "on"? If you are looking for a form of security you can break the wire to the coil or the fuel pump, and instead of a toggle switch you can use a key lock switch - then if someone figures out your circuit they still must defeat the key, assuming you have it mounted in a way that the wires are difficult to impossible to get to on the back side.
