Here is, I hope, a picture of a "log" manifold in case you havent seen one.
The home made ones I have seen were very much like your concept (flanges, rubber hoses, etc.) and worked okay for competition purposes. The one we used on our Modified Roadster was store-bought and carried eight Stromberg 97 carburetors. I guess a guy could fabricate one for three two-barrels if he wanted to but I'd say the flow characteristics wouldn't be too good.
Some early sixties high performance cars had what was called (I think) a "progressive linkage" setup that opened the center carburetor for slow speeds and progressively fed in the other two as the "loud pedal" was pressed. I think Pontiac and Ford had this type of linkage, but I'll defer to Techinspector 1 in case I'm off-base with that comment.
