I would use goats instead of the horse. If the grass is too long you just add a goat, too short you just eat a goat. I know, you still have CO2. Well, there's no free lunch but Cabrito is mighty tasty!

The goats my be the best deal, I have never had goat cheese but as long as we're giving them grass, maybe they could cut the cheese.
