They'll work fine. The 351 is the same bore as the 302, no cylinder wall interference.
I put a '69 Hi-po 351W in a Fox Mustang years ago, still runs like a charm. Had to build sub-frame connecters and shock tower braces, though, the torque was buckling the body.
