Glad you solved it so easily.
One thing we do is similiar to GM where we drill and tap a hole in the thermo housing and another in the waterpump and run a piece of that teflon tube (airshifter tube) with a couple yorlok fittings from the pump to the thermo housing to help with the blocked air.

going to the line at 180*, the run will put a lot of heat into the block/heads/coolant that won't have time to get out during the run--it will indicate high on the return road because it is high and your fans and pump need to run to continue the cooling down process---since the return speeds are low, the fans must be working to pull air thru the radiator and you don't want them on a switch that cuts off at 190 or so like on a normal street driven vehicle--you need to continue the cool down process to remove as much heat as you can for the next run--
