what carb should i chose
I have a mildly built 350 small block. An edelbrock performer air gap intake manifold. and a 750cfm edelbrock carburetor. The engine is running a bit rich (8miles to the gallon). Should I get a 4barrel edelbrock 600cfm or a quadrajet carburetor(dont know too much about these but heard they were great for mileage and performance)?

The Edelbrock and Qjet have different bases and use different manifolds.
Since you have a 750 Edelbrock, let's work with that. It's an excellent carb for your engine, but is almost certainly rich "out-of-the-box" as most Edelbrocks are. Go to Edelbrock's web site and download the manual.

Your stock main jets are .110” and metering rod size is .075” x .047”. I'd recommend going down to a .107” on the main jets (part number 1431) and a .073” x .047” (part number 1456) on the rods. You'll be amazed at the difference.
The jets are $4.00 and the rods are $8-9.00. Be sure to change the gasket (part number 1499). Another $12.00
To go leaner you could try .104” mains (part number 1430) and .070” x .042” (part number 1450) on the rods.
