There is no reason for low oil pressure with the things you did to your engine. Therefore my first guess would be a faulty gauge. If it is electric, maybe you had a poor connection. If it is mechanical, then it's time for a new one.
You say you had no oil in the valve train, were the lifters rattling? Are they hydralic?Objects in my rear view mirror are a good thing unless,.... they have red and blue lights flashing.
