James, you've got torque and you've got horsepower that will each provide you with a different "seat of the pants" feel of power depending upon how they are applied. Without having looked at the torque and horsepower curves for these two engines, I'm going to guess that you have a lot more torque at low RPM's with the standard 327 than you do with the hot 283... and the 283 will put out more horsepower up in the higer RPM range.

A lighter car with a lot of "gears" will go real good with the 283, and a heavier car with a 3 speed auto trans will move better with the 327.
