Skunk, you generally choose an intake manifold the same way you do a cam, by the operating range in which you intend to use the motor. With the manifold, it's all a matter of pulling a negative pressure in the volume of the manifold so that cylinder filling can begin taking place. Dual planes are normally used for idle to 5,000 rpm operation while single planes are used for higher operating ranges. By choosing 200 cc intake runners in the heads, you've already taken a step toward higher rpm operation. If you had low-rpm torque in mind for a good stout street motor, you would have chosen 180 or 190 cc heads.
