Go with the biggest mech sec Holley type(Demon) carb you can get---remember that just driving around you are on just the primaries and the seconaries only come into play when you get on it---
I find it very interesting that everybody does all this number crunching desk work and determines that an engine only needs this or that number of cfm, and use that as referance for total flow---however if you said that you were going to run a 2v they would be all over the 500cfm one, but would only want you to run a 600 4v----
Carb tuning of high output engines for the street evolves around BIG, and drivability is centered on PVs, Accerator pumps/nozzles, and transfer slots/proper relation with throttle blades
And of course an reasonable idle speed with decent advance curve in the ignition
