700R4 is a Overdrive. There are a wide variety of manuals if you want to swap bellhousings, install clutch assemblies and possibly driveshafts. What are you looking for?
Well it kinda feels like once I'm in third gear, I'm done. I can speed up but it feels like there is a resistance, or I slow down quick, if you know what I mean. In third, I still have pedal, but I would like to have gears to! I hope I'm making some sense, lol.
In your case, go with the 700R4. Fairly painless swap, looks OEM and should bolt up to your existing driveshaft. Also, they have a locking torque convertor. Good for 2-3 Mpg

A torque converter is a hydraulic clutch that connects the engine driveshaft output to the transmission.

This swap isn't difficult for someone who has worked on cars quite a bit. However for a first project, it would be very - no make that VERY, VERY helpful - to have an experienced hand helping you. If you've never turned a wrench on a car, you're going to need some help, or a lot of reading beforehand.
There are electrical wiring considerations also.
