Ok, so I guess noboby has made this swap yet.....I have a chance to buy the 2000 Mustang rear disc setup for cheap but didn't wanna waste the money if it's not gonna fit.
I've also read where 95 Crown Vic rear brakes can work, also 95-01 Explorer......has anybody adapted either of these to the small bearing 9" rearend?
I know there are also many kits available using other combinations too. I'm just exploring the options.

Don't have a personal experience to share, but I'd bet the small bearing bolt pattern is your limiter. The Explorer swap is very common to big bearing 9", and it's an 8.8 housing, so the 2K stang is probably the same. Best thing would be to measure the bolt pattern at the axle housing end before buying. Could be that aftermarket will be your only choice.
