Well, up-ing to 16" wheels would be a possibility, but still that only puts the tires at 26.6" tall with 295/50's. I was aiming for about the 28" range.

Right now I have 275/60/15, which are at 26.5" tall.

And no, those are not too big for a van. I have N50's on the back of my other van.
