Quick and easy fasteners?

With my fat fendered street rod, I find myself taking the thing apart and putting it back together quite often. I'm searching for some ideas on some fasteners I could use that would help speed this process up permanently. I'm am also thinking down the road when I need to do work on the car.

One specific thing is my hood sides (see my gallery). I have made my own inner fenders, so I don't know how they were attached originally. From a picture of another, it looked like they just sat in some clips. I want to be able to run my car with or wothout the sides, and I would like as clean a look as possible.

Any ideas?
