Firewall connectors are a pain. The factory uses them because the body is built separately from the underhood harness and therefore they can "plug" the two together at assembly.
Firewall connectors tend to leak and sometimes cause wiring opens or shorts. WHY use them? If you are doing your own harness, a firewall connector isnt necessary. However, you do need a way to seal the hole and a way to prevent chafing on the wires.

It fits most cable bundle sizes or individual wires. The hole is big enough to pass terminated wires thru. High quality.

Check out Route 66 Supply. They sell various styles of connectors including a few that could be used as a bulkhead connector. With building my race car, I've found quick disconnects for both wiring and plumbing are available (mostly European suppliers).
As mentioned above, you may not need one of these. If this is a street ride, I wouldn't bother.
When I built my 55 big block Nomad I used a trailer connector for an 18 wheeler. It was clean, simple, stout, and water proof. Sure made it easy to pop the front sheet metal off!
