Sounds about right. My experience is that if they like you, they'll give you the shirt off their back, if they think you need it, but don't get on their bad side. That also applies to a lot of folks I've met in the south.
Can't comment on the snake eating. A lot of Cajun's that grow up in a traditional Cajun lifestyle learn to eat what nature and hard work provides. Probably explains the strong spices in Cajun cuisine, much like Mexican food.
I'm glad everyone enjoyed the little road trip story.
I do have to say that Louisiana has it's share of corrupt politicians (maybe more than it's fare share of those), bad roads, misused taxes and mediocre education, but partially makes up for all that in some of the best food anywhere in the country. This is due entirely to the fact that the area has been extremely diverse since it was a Spanish and French territory. Louisiana cuisine is a mixture of many, many foods from all over the world. On any given weekend, you can find folks enjoying a traditional barbecue, fish fry, crab or crawfish boil, or a big pot of jambalaya or gumbo. I consider myself fortunate.
No I don't consider crawfish to be seafood. What I do consider it is a lot of work! I eat crawfish a couple of times a year (my company and my wife's company have a boil for their employees) and have a hard time peeling them fast enough to not be hungry
. And no, I don't suck the fat out of the head!
My cholesterol is plenty high enough as it is! I much prefer a big pile of boiled shrimp.
