I am looking at some Hooker Headers and some type of exhaust since the current glasspacks and pipes seem to be mighty rusted.

No, it wouldn't thin the block to much. That's only .050 over. But you would have to get a 390 crank and rods to go with the pistons. For a 360, you'd just bore and get the pistons.
