Yes you leave the metal ring on. They should be should be a snug fit to the guides. You can crimp them if needed but they should be fine without. I've also see where the seals are two different colors. One color for exaust and one for the intake.
I have no diagrams for the torque sequence so bear with me here....
Intake
4 7 1 9 6 front -> 4-6 is the left (dr) side 5-3 the right (pass)
5 10 2 8 3
Step the torque by 5-10 ft lbs till you reach max torque. Note iron and aluminum values.
Head
9 5 1 3 7
10 6 2 4 8
first bring to 70. Then again to 80. Then final to 85-90 ft lbs
Rockers are just 1 2 3 4 step by 10 till 40-45 ft lbs
I'm not sure what exaust manifolds you have so...... 8 bolt vertical pattern is 18-24 ft lbs and the 14-16 bolt 15-20 ft lbs.
