316 is considered marine grade because it is more corrosion resistant. There may be more polishing involved with 304 to keep it looking sharp. The L eg. 316L or 308L means low carbon. It has less tensile strength and will be a little easier to work with as a result. No decrease in corrosion resistance, however. It's cheaper, too.
