Is it an electric or mechanical gauge? Have you started it with a Valve cover off to see if oil is pumping up the push rods? How soon does the pressure drop to 0? Immediate or gradually?
It may be a stretch, but one thing I can think of is Vacuum. With just the starter there is no vacuum, with motor running there is, but still hard to believe it would suck that much oil. Any other signs of escaping oil, leaks or blue smoke?Of course, that's just my opinion, I could be wrong!

Even when cranking with the starter, you should be close to 0 psi. I think you have a guage problem.

If you're using plastic line, make sure that it's not cracked or kinked.
I've had a lot of BIG things happening to me lately but now I'm back to working on the car some, it feels good! The tranny mount was bad and that helped put everything back where it should be....
