I am very new to rodding, and am having loads of fun.
I recently bought new valve cover for my Chev 327 and have not fitted then yet, because I am unsure of how much torque to use.
Can anybody recommend anything?

Just snug it with a short handled wrench so you don't overtorque it, and if it is a stamped cover, use the spreader washers to avoid dimpling it, which can cause leaks.
This one is a no brainer.

Hold your rachet at the rachet rather than using the handle.
Or use a nut driver rather than a rachet.
This page says 3 ft-lb.
