Back in the day (long long time ago) we would shim the rocker assembly for correct valve lash. Perhaps when you disassembled the motor the shims got misplaced? Your dealer's service dept might have shims for this.

My troubles were on a dodge, roller tip rockers, can't adjust while running.
Chevy is much easier. For that matter, a stock 318 is easier yet! You just lock down the rocker shaft and forget it.
