I'm rebuilding a stroker383 and i was wondering what Gaskets should i use for it

i've used Fel-Pro gaskets for years and have been satisfied with them. That's not to say that any other premium gaskets won't work just as well, just don't use cheapo gaskets.
Do a search on www.summitracing.com for your needs.
If you're asking about head gaskets, the following would be my suggestions:
If the pistons are down in the hole 0.020" to 0.025" at TDC, use summit # FPP-1094 shim gaskets, compressed at 0.015"
If the pistons are 0.001" down in the hole to popped up 0.004" out of the hole, use FPP-1094, compressed at 0.039"
If the pistons are popped up out of the hole 0.011" to 0.016", use FPP-1044, compressed at 0.051"
The idea is to set your squish (piston crown to cylinder head clearance)somewhere between 0.035" and 0.040"PLANET EARTH, INSANE ASYLUM FOR THE UNIVERSE.
