I've set up a few over the years on both my personal cars and for customers.
If your looking for pure performance, your likely better off with a well designed single carb manifold and carb dialed in to your car and driving style.
That said, if your looking for WOW factor, I've had pretty good luck with them once they are propery carburated/calibrated.
For a street setup, I like Edelbrock carbs set up with progressive linkage. With your combination, I would say carbs in the 600/650 CFM range. The "new" AVS Edelbrock would be nice to dial in but I've only head about them being offeded in the 750 CFM range and I suspect that would be a bit much for most dual carb setups.
If you elect to go with Holley carbs make sure you get the newer design that have the power valve protection designed into them.I've NEVER seen a car come from the factory that couldn't be improved.....
